THE FUDGIEST BROWNIES I'VE EVER MADE: gluten free, dairy free, refined sugar free
I grew up eating brownies made from a box and there’s definitely something appealing about their moist, cake texture and cocoa flavor. I wanted that same fun childhood memory without the sugar hangover, which is how I came up with this delicious recipe that’s refined sugar free!
Did I mention it’s also gluten free, dairy free? I’ve always had a big sweet tooth, but after having severe gut issues and healing myself from the inside out via holistic nutrition and lifestyle changes, I’m very picky about the ingredients I consume. Store bought sweets can absolutely cause gut flareups even if they claim to be “clean” there are still many preservatives and fillers that cause bloat, indigestion, acid reflux, etc.
If you like your brownie extra fudgy, I recommend you store this in the fridge for at least 3 hours. I like to serve my slice of brownie with a dollop of coconut cream and unsweetened desiccated coconut. It definitely brings this dessert to the next level.
These are not what I’d consider “healthy” but they are dang good and they are still dairy, gluten, refined sugar, nut AND soy free. There’s a difference (in my opinion) between clean foods that don’t contain processed junk foods and healthy, nutrient dense foods that give your body the building blocks it needs to heal. All this being said, life is too short, so of course I want us all to have treats and enjoy them, but I also want to live the latter part of my years actually LIVING life….not spending my retirement fund on medical bills in the hospital. Ya feel me?
Behold the the fudgiest brownies I’ve EVER made...yes fudgier and better tasting than the boxed brand!

INGREDIENTS:
-1 cup melted coconut oil
-1 3/4 cup coconut sugar
-2 cup enjoy life dairy free chocolate chips
-1 tsp vanilla
-1 tsp baking powder
-1 tsp salt
-1 1/4 cup gluten free flour (I used Trader Joe’s brand)
-4 eggs
-3/4 cup cacao powder
DO IT
1.Preheat oven to 350F
2.Line a 9x9 brownie with parchment paper, set aside
3.In a saucepan gently melt together the coconut sugar, 1 cup of the chocolate chips and coconut oil
4.While that’s melting, whisk the eggs & vanilla together
5.Stir in the salt, baking powder, and cacao powder
6.Pour in the melted chocolate, oil, sugar mix. Stir till smooth
7.Add the flour and remaining chocolate chips, stirring till incorporated
8.Pour into your prepared brownie pan and bake for 25-27 mins
9. The brownies should be cooked on the top but still gooey in the middle. They will cook and harden up more once they cool down a bit so be sure to wait till they’re completely cooled before cutting into them
