KETO PUMPKIN PIE SEA SALT TRUFFLES!!

Okay guys I am SOO ready for sweaters and boots, but in San Francisco, we have our “Indian Summer” from September-November which means warm weather in SF!


So as much as I want to be making all things cozy like fresh baked cookies and pumpkin spice latte’s, it just doesn’t hit the same in warm weather.

That being said, I’ve decided to create a fall-flavored treat perfect for any weather! And let me tell you, these NO BAKE pumpkin truffles turned out amazing!! It’s got all the warm comforting flavors I was craving (and know you are, too) in a cool bite that’s ready in minutes. The only regret I have is not making more.



And of course, I made them with my favorite-ever pecan butter, from Georgia Grinders. I’m obsessed with Georgia Grinders because their nut butters are CLEAN – no added oils or sugars, which makes me feel good and the taste is simply incredible! Not to mention, the consistency is a baker’s DREAM!!

Now that your mouth is drooling, let’s get to the pumpkin ie sea salt truffle recipe!! 


👇🏼 (makes 18 small truffles)

Ingredients:

1/4 cup no sugar added @georgiagrinders pecan butter

1/2 cup pumpkin purée

1/4 cup coconut flour

3 Tbsp maple syrup

1 Tbsp pumpkin pie spice

1/2 tsp vanilla extract

Pinch of sea salt


Coating: 3/4 cup @lily’s chocolate chips melted + 1 tsp coconut oil


Topping: Sprinkle of maldon sea salt + pumpkin pie spice


Instructions:

1. Combine truffle ingredients in a bowl (set aside the coating & topping).


2. Using a small Tbsp-sized cookie scooper (or your hands), form balls and place them on a parchment-lined tray in the freezer for 10 min.


3. Dip balls into melted chocolate coating mixture, then sprinkle with Maldon sea salt (or regular sea salt) + a little sprinkle of pumpkin pie spice.


4. Freeze for 5 more minutes and enjoy! P.S. I like to store these bad boys in the fridge.
