GF, DF, SUGAR-FREE, COCOA CINNAMON BANANA BREAD
This entire loaf is sweetened naturally by bananas (+optional dairy-free chocolate chips 😜), and is surprisingly high in protein! Sometimes I’ll even add collagen and warm it up for breakfast. And let me tell ya, the texture is perfection.
Let’s get to it!
Ingredients:
1 1/2 cup almond flour
1/4 cup tapioca flour
3 tbsp gluten-free flour
4 super ripe bananas +1/2 sliced banana
3 eggs
1 tsp almond extract
1 tbsp cinnamon
1 tsp baking soda
1 tsp baking powder
3/4 cup cocoa powder
3/4 cup of dairy-free chocolate chips
1/2 tsp Himalayan pink sea salt
INSTRUCTIONS
Preheat oven to 350.
Line a loaf pan with ghee (so it’s non-stick)
In a medium bowl, hand whisk together dry ingredients.
Using any blender, blend the bananas and wet ingredients until it looks like a thick smoothie (about 15 seconds).
Make a little hole with the dry ingredients and pour the wet ingredients into the hole. Hand stir until combined.
Add the chocolate chips and extra sliced bananas and fold them into the mixture.
Pour into the ghee greased loaf pan and smooth out the top with a spatula.
Optional: Cut 1 large banana in half and place smooth sides down for pretty (and tasty) garnish.
Bake for 50 minutes (or until a toothpick comes out clean).
